I've installed a lot of Throttlemeisters (> 20 sets, mostly on BMWs). There is a 'trick' to getting the adjustment right. The primary cluprit for difficulty in operation is usually traceable to properly cutting out the end of the grip rubber to clear the attachment point.

The other problem(s) for most of the installs is either in not cleaning out the inside of the open bar end or overtightening the adapter/insert into the end of the handlebar. If you have threaded bar ends, the adjustment is by moving the throttle tube assembly.
I've had 100% success in installing these and having happy users...

The Ultra Classic is a great bike!
I've only had a few miles to ride one, but its comfortable and a lot more capable than most people think. Congrats! I've come close a few times to buying a Sportster 1200, also an excellent choice.
