They calculated times when major solar flares were unlikely. Things like water and metals were used which could deflect a lot of radiation. Their flight trajectory was devised such that they would fly through the Van Allen Belt where NASA wanted them to and only had a few hour exposure duration.
The human body can also deal with getting dosed pretty well by certain radiations as well.
