When I had that problem I was unconsciously holding the the right stick in and when I released the pressure dead eye was canceled. Other then that I don't know what to tell you. I never had any problems targeting multiple animals.

Got to 96.4% completion today. All I need is one last piece for the Reyes Rebels uniform, and to finish my sharpshooter levels. (I am on like level 8 or 9 for that).
