Love me some brisket.... I usually just go to Smokey Bones. I know it is chain, but they have some good stuff. There is one directly across the street from the store. Make that directly west from my store. Why does that matter?? Wind comes from the west. Every morning I smell those smokers cooking that meat, and if the wind is strong enough, every time the front door is opened.

There's no mystery about it. It's all of the parts of the chicken that get left behind after you remove the breasts, thighs, legs, wings, etc. Mechanically separated from the bones.
