Portable Air Conditioners?

I've got a friend in the food business in town. If you're interested in eventually just renting out some commercial kitchen space, I can do some digging. Not sure how big this project of yours is.

You can find smaller and cheaper units, this is just an idea. You want something with a large drain pan, so you can leave it a few hours without worrying about it flooding over and ruining the floor, etc. And you do want to have it near a window or vent, tho you can get a longer dryer hose, etc to get it vented. You def want wheels too for easier relocation.

Better than a swamp cooler.

I'm not sure how big it is either just yet.

That copper grid would take a millennium to solder together. and that would only be worth while if you took a fishtank pump and pushed the water back up into the cooler.

I bought a stand up A/C unit to cool off a 10/10 room, worked well and was quiet. You NEED to vent it to the outside though, so I would suggest putting a piece of wook that fits into the window opening, then cutting out a circular hole to put the duct though.
