If you are going to be putting them on and taking the off that often, I'd mount them with a cotter pin and rod system like the chock uses.

Yea I'm considering that option.... I went this way because I wanted to use crap that I had at my house already... I might also go with a rod through the axle as well and have a friend turn the spacers out of aluminum.
